After the so called 'remuage' operation is completed - with the bottles placed upside down - it is needed to remove the solid particles inside the bottle.
The neck freezer is designed to cold down the temperature of the wine into the bottle (including all the residual particles) to obtain a solid ice piece, easy to be rejected by removing the crown cap.
